Watermelon, Halloumi and Superseeds Salad

Crispy halloumi, juicy watermelon, fresh mint and a chilli lime dressing all on a bed of Superseeds and Grains. A summer must have!

Ingredients

  • Salad -1 pouch Merchant Gourmet Superseeds, at room temperature
  • 250g watermelon, cut into rough chunks or triangles (skin removed)
  • 225g halloumi, sliced into 1cm slabs
  • Large handful of fresh mint leaves
  • Small handful of fresh flat leaf parsley
  • ½ red onion, very thinly sliced
  • 1 fresh red chilli, thinly sliced
  • 1 tbsp neutral oil for frying
  •  

  • Dressing - juice of 2 limes
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey
  • 1 fresh red chilli, finely chopped
  • 1 small garlic clove, finely grated
  • Pinch of fine salt
  •  

  • Extra - mint leaves
  • Flaky sea salt
  • Chilli flakes for colour

Instructions

  1. Make the dressing -whisk together the lime juice, olive oil, honey, chilli, and garlic. Season with a pinch of salt. Taste and adjust if needed. It should be sharp, slightly sweet, and have a clean heat. Set aside to allow the flavours to meld while you prepare the salad.
  2. Prep the superseeds -open the pouch of Merchant Gourmet Superseeds and tip it into a wide, shallow serving bowl or platter. No heating is needed. Serve at room temperature. Spread the seeds out evenly to create the base of the salad.
  3. Fry the halloumi - heat the neutral oil in a non-stick frying pan over high heat until shimmering. Add the halloumi slices in a single layer and fry for 1.5 to 2 minutes on each side without moving them, until deeply golden and caramelised. Remove from the pan immediately and season with a pinch of flaky sea salt.
  4. Build the salad - scatter the watermelon over the superseed base. Add the thinly sliced red onion and red chilli. Tear over the mint and parsley leaves. Arrange the hot halloumi on top while it is still crisp from the pan.
  5. Dress and finish - pour the chilli lime dressing over the salad just before serving. Finish with extra mint leaves, a pinch of chilli flakes, and a final sprinkle of flaky sea salt. Serve immediately.
