Chestnut & Mushroom Nut Roast

A hearty plant-based roast packed with chestnuts, mushrooms, herbs, almonds and sultanas. Full of festive flavour and texture, it's a simple yet impressive centrepiece for Christmas dinner or Sunday lunch.

Chestnut & Mushroom Nut Roast
Ingredients
  • 2 pouches Merchant Gourmet Whole Chestnuts
  • 250g chestnut mushrooms, chopped
  • 3 medium carrots, finely chopped
  • 1 white onion, finely chopped
  • 3 garlic cloves, grated or finely chopped
  • ½ cup almonds, roughly chopped
  • ½ cup sultanas
  • ½ cup brown rice flour
  • 3 tbsp flaxseeds
  • 6 tbsp water
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh sage, finely chopped
  • 1 tsp ground nutmeg
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tbsp coconut oil

  1. Preheat the oven to 180°C.
  2. In a small bowl, mix the flaxseeds with the water and leave for 5–10 minutes until thickened and gelatinous.
  3. Heat the coconut oil in a large casserole dish or frying pan.
  4. Add the onion and carrots and cook gently for 5–7 minutes until softened.
  5. Stir through the garlic and cook for a further 2 minutes.
  6. Add the mushrooms, rosemary, sage and nutmeg and cook for 10 minutes.
  7. Roughly chop one pouch of Merchant Gourmet Whole Chestnuts into bite-sized pieces.
  8. Mash the second pouch with a fork until it resembles coarse crumbs.
  9. Add both chestnut preparations to the pan along with the almonds, sultanas, flax mixture, sea salt and black pepper.
  10. Mix thoroughly, then remove from the heat.
  11. Stir through the brown rice flour until fully incorporated.
  12. Line a loaf tin with baking parchment and spoon in the mixture.
  13. Press down firmly with a spatula to compact the mixture.
  14. Bake for 1 hour, covering loosely with foil halfway through if the top starts to brown too quickly.
  15. Remove from the oven and leave to rest for a few minutes before slicing and serving.
