Gochujang Mushroom Stir Fry

A colourful stir fry packed with Mixed Mushrooms, crisp vegetables and Korean-Style Grains, all coated in a sweet, savoury and gently spicy gochujang sauce. Quick, flavour-packed and perfect for an easy midweek dinner.

Gochujang Mushroom Stir Fry
Ingredients
  • 1 x 30g pack Merchant Gourmet Dried Mixed Mushrooms
  • 1 tsp sesame oil
  • 4 spring onions
  • 2 carrots
  • 1 pack purple sprouting broccoli
  • 1 red pepper
  • 1 thumb-sized piece ginger, grated
  • 2 garlic cloves
  • 2 red chillies, finely sliced
  • 1 pouch Merchant Gourmet Korean-Style Grains
  • Fresh lime wedges, to serve
  • Gochujang Sauce
  • 2 tbsp soy sauce
  • 2 tbsp agave syrup
  • 2 tbsp lime juice
  • 1 tsp cornflour
  • 1 tsp gochujang paste
  1. Place the Merchant Gourmet Dried Mixed Mushrooms in a heatproof bowl and cover with 200ml boiling water. Leave to soak.
  2. Heat the sesame oil in a wok over a high heat.
  3. Slice the spring onions, carrots, broccoli, pepper, garlic, ginger and chillies into similar-sized pieces.
  4. Add the vegetables to the wok and stir-fry for several minutes until just beginning to colour while retaining some crunch.
  5. Drain the mushrooms, reserving a splash of the soaking liquid and leaving behind any sediment.
  6. Add the mushrooms to the wok.
  7. Stir through the Merchant Gourmet Korean-Style Grains.
  8. In a small bowl, whisk together the soy sauce, agave syrup, lime juice, cornflour, gochujang paste and a splash of the mushroom soaking liquid.
  9. Pour the sauce into the wok and toss well until the vegetables and grains are evenly coated.
  10. Cook for a further 1–2 minutes until everything is hot and the sauce has slightly thickened.
  11. Serve with a squeeze of fresh lime and a scattering of chopped coriander.
