Mont Blanc Meringues

A playful twist on the classic French dessert. Crisp meringue nests are filled with sweet Chestnut Purée, topped with whipped cream and finished with delicate chestnut swirls, icing sugar and chocolate shavings.

Mont Blanc Meringues
Ingredients
  • Liquid from 1 x 400g tin chickpeas (approximately 135ml aquafaba)
  • 175g caster sugar
  • 1 tbsp cornflour
  • 1 pouch Merchant Gourmet Chestnut Purée
  • 50ml maple syrup
  • 150ml plant-based cream
  • 20g chocolate, shaved
  • Icing sugar, for dusting

Chestnut Purée
  1. Preheat the oven to 110°C (90°C fan) and line two baking trays with baking parchment.
  2. Place the aquafaba into a large mixing bowl and whisk on a low speed for 2 minutes until foamy.
  3. Increase to a medium speed for 1 minute, then whisk on high until stiff peaks form, up to 10 minutes.
  4. Add the cornflour and whisk again.
  5. Gradually add the caster sugar, one tablespoon at a time, whisking continuously until the mixture is thick and glossy.
  6. Spoon or pipe the mixture into 12 meringues, approximately 3–4 inches wide, creating a dip in the centre of each.
  7. Bake for 1 hour 10 minutes, or until crisp and cooked through. Leave to cool completely.
  8. Meanwhile, push the Merchant Gourmet Chestnut Purée through a sieve and stir through the maple syrup until smooth.
  9. Whip the plant-based cream until it holds firm peaks.
  10. Spoon a little chestnut cream into the centre of each cooled meringue.
  11. Pipe the whipped cream on top to create a cone shape.
  12. Transfer the remaining chestnut cream to a piping bag fitted with a small nozzle and pipe fine squiggles over the cream to create the classic Mont Blanc effect.
  13. Dust with icing sugar and finish with the chocolate shavings before serving.
