Creamy Porcini Mushroom Tagliatelle

A comforting pasta dish that lets mushrooms take centre stage. Porcini Mushrooms add deep savoury flavour to a silky sauce made with leeks, garlic and white wine, finished with fresh tarragon and lemon zest.

Creamy Porcini Mushroom Tagliatelle
Ingredients
  • 1 x 30g pack Merchant Gourmet Dried Porcini Mushrooms
  • 30g plant-based butter
  • 2 large leeks, trimmed and sliced
  • 2 garlic cloves, crushed
  • 1 large pack chestnut mushrooms, sliced
  • 400g tagliatelle
  • 1 tbsp plain flour
  • 100ml white wine
  • Fresh tarragon, chopped
  • Lemon zest
  • Salt and black pepper
  1. Place the Merchant Gourmet Dried Porcini Mushrooms in a heatproof bowl and cover with just enough boiling water to submerge. Leave to soak.
  2. Melt the plant-based butter in a large frying pan over a medium heat.
  3. Add the sliced leeks with a pinch of salt and cook gently until softened.
  4. Stir in the garlic and chestnut mushrooms and cook until the mushrooms begin to brown.
  5. Drain the porcini mushrooms, reserving the soaking liquid and leaving behind any sediment.
  6. Add the porcini mushrooms to the pan and cook gently for a few minutes.
  7. Meanwhile, cook the tagliatelle according to the packet instructions in well-salted boiling water.
  8. Sprinkle the flour over the vegetables and cook for 2 minutes, stirring constantly.
  9. Pour in the white wine and stir well.
  10. Add the reserved porcini soaking liquid and bring to a gentle simmer.
  11. Drain the tagliatelle and add it directly to the sauce with a splash of pasta cooking water.
  12. Toss until the pasta is evenly coated.
  13. Finish with chopped tarragon and lemon zest before serving.
