Porcini & Puy Lentil Lasagne

A rich, deeply savoury lasagne layered with Porcini Mushrooms, Puy Lentils and a silky plant-based béchamel. Full of earthy flavour and comforting textures, it's a plant-based twist on a true classic.

Porcini & Puy Lentil Lasagne
Ingredients
  • Porcini & Puy Lentil Ragù
  • 1 x 30g pack Merchant Gourmet Porcini Mushrooms
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 300g button mushrooms, chopped
  • 2 carrots, diced
  • 2 celery sticks, finely chopped
  • 1 tbsp tomato purée
  • 200ml red wine
  • 1 x 400g tin chopped tomatoes
  • 200ml vegetable stock
  • 1 tsp yeast extract
  • Pinch caster sugar
  • 2 packs Merchant Gourmet Simply Cooked Puy Lentils
  • Sprigs of thyme and rosemary
  • 2 bay leaves
  • Salt and black pepper
  • Plant-Based Béchamel
  • 75g plant-based butter
  • 75g plain flour
  • 700ml non-dairy milk
  • 1 tbsp Dijon mustard
  • 3 heaped tbsp nutritional yeast
  • Pinch grated nutmeg
  • Freshly ground black pepper

  • Lasagne sheets
  • Vegan cheese alternative, grated (optional)
  1. Place the Merchant Gourmet Porcini Mushrooms in a heatproof bowl and cover with 300ml boiling water. Leave to soak.
  2. Heat a little oil in a large saucepan and cook the onion, garlic, carrots and celery with a pinch of salt until softened.
  3. Add the button mushrooms and cook until golden.
  4. Drain the porcini mushrooms, reserving the soaking liquid and leaving behind any sediment.
  5. Add the porcini mushrooms to the pan.
  6. Stir through the tomato purée and cook until darkened slightly in colour.
  7. Add the red wine, chopped tomatoes, vegetable stock, yeast extract, sugar, thyme, rosemary, bay leaves and reserved mushroom soaking liquid.
  8. Bring to the boil, then reduce to a simmer and cook for around 30 minutes.
  9. Stir through the Merchant Gourmet Simply Cooked Puy Lentils and simmer for a further 15 minutes until rich and glossy. Remove from the heat.
  10. Preheat the oven to 180°C.
  11. Meanwhile, melt the plant-based butter in a saucepan.
  12. Add the flour and cook, stirring continuously, until the mixture resembles wet sand.
  13. Remove from the heat and gradually whisk in the non-dairy milk a little at a time until smooth.
  14. Return to the heat and cook gently, whisking, until thickened.
  15. Stir through the Dijon mustard, nutritional yeast, black pepper and a pinch of nutmeg.
  16. To assemble, spread a thin layer of ragù into the base of a baking dish.
  17. Add a layer of lasagne sheets, followed by more ragù and a layer of béchamel.
  18. Repeat the layers until all the sauces have been used, finishing with a layer of béchamel.
  19. Scatter over the vegan cheese, if using.
  20. Bake for approximately 45 minutes, until golden and bubbling.
  21. Check the pasta is fully cooked by inserting a knife through the layers before serving.
