Spicy Korean Grain Slaw

A colourful, crunch-packed slaw combining Korean-Style Grains with crisp vegetables and a punchy gochujang dressing. Fresh, vibrant and full of texture, it's perfect as a side dish, lunch or barbecue salad.

Spicy Korean Grain Slaw
Ingredients
  • 2 pouches Merchant Gourmet Korean-Style Grains
  • ¼ red cabbage, finely shredded
  • 2 carrots, grated
  • 3 spring onions, finely sliced
  • 1 red pepper, cut into thin matchsticks
  • 2 handfuls bean sprouts
  • Handful fresh coriander leaves
  • Toasted sesame seeds (white, black or mixed)
  • Gochujang Dressing
  • 1 thumb-sized piece fresh ginger, peeled and grated
  • 3 heaped tsp gochujang
  • 3 tsp soy sauce or tamari
  • 5 tsp sesame oil
  • 3 tsp rice vinegar
  • 2 heaped tsp white miso
  • 4 tsp water
  • Squeeze of honey or agave syrup
  1. Finely shred the red cabbage, grate the carrots, finely slice the spring onions and cut the red pepper into thin matchsticks.
  2. Place the vegetables into a large mixing bowl with the bean sprouts and Merchant Gourmet Korean-Style Grains.
  3. In a separate bowl, combine the grated ginger, gochujang, soy sauce, sesame oil, rice vinegar, white miso, water and honey or agave.
  4. Whisk together until smooth.
  5. Pour the dressing over the grain mixture and toss thoroughly until everything is evenly coated.
  6. Taste and adjust the seasoning if required.
  7. Transfer to a serving platter and finish with the coriander leaves and toasted sesame seeds.
