Thai Green Curry with Coconut & Lime Leaf Rice

Thai Green Curry with Coconut & Lime Leaf Rice
Ingredients
  • 1 onion, diced
  • 2 tbsp Thai green curry paste
  • 1 green pepper, cut into chunks
  • 1 pack sugar snap peas
  • 1 pack Tenderstem broccoli
  • 1 x 400ml tin coconut milk
  • 2 pouches Merchant Gourmet Coconut & Lime Leaf Wholegrain Rice
  • Handful fresh coriander, chopped
  1. Chop the onion and green pepper into even-sized pieces and trim the Tenderstem broccoli if needed.
  2. Heat a large frying pan or sauté pan over a medium heat. Add the onion and Thai green curry paste and cook for 4–5 minutes until softened and fragrant.
  3. Add the green pepper, sugar snap peas, Tenderstem broccoli and coconut milk.
  4. Bring to a gentle boil, then reduce to a simmer and cook for 10–15 minutes until the vegetables are tender but still vibrant.
  5. Heat the Merchant Gourmet Coconut & Lime Leaf Wholegrain Rice according to the packet instructions.
  6. Divide the rice between bowls and spoon over the curry.
  7. Finish with the chopped coriander and serve.
