Beans on Toast with Onions, Feta & Chives

Your weekend brunch, sorted. Gourmet Baked Beans with quick pickled onions, feta and chives. Chefs kiss!

Ingrédients

  • 1/2 red onion
  • 1/2 lemon
  • Sugar
  • Salt
  • 1 clove garlic
  • 1 slice sourdough toast
  • 1 pouch of Merchant Gourmet Baked Beans
  • 1 small bunch chives
  • 30–50g feta

Méthode

  1. Prepare the quick pickled onions: slice the red onion, add a pinch of salt and scrunch together. Add the juice of 1/2 lemon and two large pinches of sugar, then scrunch again. Leave to pickle for at least 10 minutes (or up to 1 day).
  2. Heat the baked beans in a saucepan for a few minutes until warm, or microwave according to the packet instructions.
  3. Toast the sourdough. While still hot, rub it with the garlic clove.
  4. Finely chop the chives.
  5. Assemble the toast: top the garlic-rubbed sourdough with the beans, crumbled feta, chives, and some of the pickled onions.
  6. Serve and enjoy
