Ingredients
- 2 tbsp butter or olive oil
- 1 large onion
- 4 sprigs thyme leaves
- 2 cloves garlic crushed
- 2 pouches of Merchant Gourmet Whole Chestnuts
- 800ml veg stock
- 120ml single cream or alternative
- 1 tsp Worcester sauce
- ½ tsp black pepper
- Salt (to taste)
- Sautéed mushrooms
- Crispy fried sage leaves

Instructions
- In a large pan, heat the butter or olive oil on a medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the garlic and thyme leaves, and sauté for an additional 1-2 minutes until fragrant.
- Add the chestnuts, pour in the vegetable stock, and bring the mixture to a gentle boil. Reduce the heat to low, cover, and let it simmer with the lid on for about 15-20 minutes.
- Use a hand or countertop blender to puree the soup until it's smooth and creamy.
- Return the blended soup to the pan, reduce to a low heat, and stir in the cream and Worcester sauce.
- Season the soup with black pepper and salt to taste.
- Serve immediately topped with sautéed mushrooms and crispy sage leaves.

Really tasty soup and great recipe from Knife and Soul. Made this for the first time today and will definitely make again. Super easy to make and had a great depth of flavour. Looks like more merchant chestnuts are going to be getting added to the shopping list!
