Ingredients
- 1/2 red onion
- 1/2 lemon
- Sugar
- Salt
- 1 clove garlic
- 1 slice sourdough toast
- 1 pouch of Merchant Gourmet Baked Beans
- 1 small bunch chives
- 30–50g feta
Instructions
- Prepare the quick pickled onions: slice the red onion, add a pinch of salt and scrunch together. Add the juice of 1/2 lemon and two large pinches of sugar, then scrunch again. Leave to pickle for at least 10 minutes (or up to 1 day).
- Heat the baked beans in a saucepan for a few minutes until warm, or microwave according to the packet instructions.
- Toast the sourdough. While still hot, rub it with the garlic clove.
- Finely chop the chives.
- Assemble the toast: top the garlic-rubbed sourdough with the beans, crumbled feta, chives, and some of the pickled onions.
- Serve and enjoy
