Cheesy Baked Bean and Crumpet Bake

Smoky chipotle beans are piled onto toasted crumpets, topped with spring onions and melted cheese for an easy, comforting plate. Perfect for a weekend brunch. 

Ingredients

  • 2 x 200g Merchant Gourmet Gourmet Baked Beans pouches
  • 1 tsp chipotle paste
  • 8 crumpets
  • 1 tbsp butter
  • 4 spring onions (trimmed and sliced)
  • 80g grated cheddar

Instructions

  1. Heat a grill to 200°C.
  2. Lay the crumpets in an ovenproof dish. Grill for 3–4 minutes until golden.
  3. Butter the crumpets. 
  4. Add 1 tsp of chipotle paste to each pouch of beans. Stir, then spoon the beans onto the crumpets.
  5. Sprinkle over the spring onions and grated cheddar.
  6. Place the crumpets back under the grill for 5–6 minutes until the cheese is melted and bubbling.
  7. To cook in an air fryer, preheat to 200°C. Cook the crumpets for 3 minutes before following the recipe above. Return the crumpets to the air fryer and cook for a further 5 minutes.
