Puy Lentil Burgers with Sweet Chilli & Mango Slaw

These easy Puy Lentil burgers are packed with plant protein and all the good stuff. Pile into fluffy brioche buns, then top with pickled cabbage, Dr Wills Sweet Chilli and Sriracha Sauce for a spicy hit.

  1. To make the Puy Lentil burgers, add your pouch of puy lentils, half a green chilli, garlic cloves, soy sauce, juice of half a lime, breadcrumbs, seasoning to taste and water to a blender. Blend until it makes a thick paste, you may need to add a little more water if the mixture is too dry.
  2. Form into 4 equal balls, then shape into flat burger patties.
  3. Add to a pan with olive oil on a medium heat and fry for 5 minutes on each side until golden.
  4. Meanwhile, make the mango slaw by adding chopped mango, finely chopped red chilli, chopped cabbage, sriracha, juice of half a lime and yoghurt to a bowl. Mix well and season.
  5. Once the burgers are cooked through, add your slaw to the base of the bun, followed by your burger, a good squeeze of Dr Wills Sweet Chilli Sauce and a handful of coriander. Enjoy!
