Ingredients
- 1 shallot
- 2 cloves garlic
- 300g cherry tomatoes
- 1tbsp smoked paprika
- 400ml coconut milk
- 100ml vegetable stock
- 1 pinch saffron (bloomed in 100ml room temp water)
- 1 packet of Merchant Gourmet Spanish Style Grains
- 1 lime
- 1 sprig coriander
- Drizzle of olive oil
- Salt and pepper
Instructions
- Add finely chopped shallot to a saucepan along with a glug of vegetable oil and a pinch of salt.
- Sweat for a few mins and then add finely chopped garlic, cooking for another few mins.
- Add the cherry tomatoes and cook until the skins start to burst open, stirring so they don't catch on the pan.
- Add 1tbsp smoked paprika and cook out for another couple of minutes.
- Add the coconut milk, vegetable stock and saffron (along with the water) to the pan and bring to the boil. Once at a boil bring down to a simmer and reduce the broth until you get a lovely thick consistency, this could take up to 10mins.
- Season to taste with salt and pepper once reduced.
- Meanwhile cook your Merchant Gourmet Spanish Style Grains by heating them through in the microwave or heating in a separate pan with a splash of water.
- Place your Spanish Style Grains at the base of a bowl and pour the now thickened broth over the top.
- Garnish with a drizzle of olive oil, lime, coriander and enjoy!
