Greens, Grains & Bean Salad with Pesto Dressing

A different kind of green goddess. Fresh crunchy and flavourful, this dish combines spelt broccoli, beans, spinach, and almonds tossed in a light but zingy pesto dressing. 

Ingredients

  • 1 pack of Merchant Gourmet Wholegrain Spelt
  • 200g tenderstem broccoli, cut into pieces
  • 200g french beans, cut into pieces
  • 1 merchant gourmet spelt pouch
  • ½ red onion, finely chopped
  • 100g whole almonds, roasted
  • 100g spinach
  • Salt and pepper
  •  

    Pesto dressing:

  • 150g tub fresh pesto
  • 2 tbsp white balsamic vinegar
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 180 degrees. Place your almonds onto a baking tray and roast for 5 minutes, then set aside.
  2. Bring two saucepans to the boil over a high heat, add your broccoli in one saucepan for 4 minutes and the french beans in the other saucepan for 3 minutes. Blanch them both in cold water and set aside.
  3. Heat the Merchant Gourmet Spelt following the pack instructions.
  4. Put all the ingredients together in a large bowl and mix well. Season with salt and pepper.
  5. To make the dressing, add all the ingredients together and drizzle over the salad when ready to serve. Enjoy!
