Coronation Chickpea Salad

Coronation chicken gets a plant-based makeover in this colourful summer salad. Crispy spiced chickpeas, 5 Glorious Grains and sweet bursts of sultana are tossed in a creamy curried dressing, while crunchy cucumber, apple and fresh herbs bring plenty of freshness. Packed with texture and flavour, it's the kind of easy lunch you'll want to keep on repeat all summer long.

Ingredients
  • 1 pouch Merchant Gourmet Jumbo Chickpeas
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Sea salt and black pepper
  • 3 tbsp natural or Greek yogurt
  • 2 tsp curry powder
  • 3 tsp mango chutney
  • Juice of ½ lime
  • A handful of sultanas, plus extra to serve
  • Kale, spinach or rocket leaves
  • ½ cucumber, cut into thin matchsticks
  • 1 small apple, cut into thin matchsticks
  • 1 small red onion, finely sliced
  • 1 pouch Merchant Gourmet 5 Glorious Grains
  • Seeds and nuts
  • Feta or plant-based alternative, crumbled (optional)

  1. Preheat the oven to 180°C / 160°C fan / Gas Mark 4.
  2. Place the Merchant Gourmet Jumbo Chickpeas on a baking tray and toss with the paprika, garlic powder, sea salt and black pepper.
  3. Roast for 20 minutes until golden and crisp.
  4. Meanwhile, make the coronation dressing. Mix together the yogurt, curry powder, mango chutney and lime juice in a large bowl. Stir through the sultanas.
  5. Arrange the salad leaves, cucumber, apple and red onion in a serving bowl.
  6. Heat the Merchant Gourmet 5 Glorious Grains according to the pack instructions and add to the salad.
  7. When the chickpeas are crisp, stir them through the coronation dressing.
  8. Spoon the chickpea mixture over the salad and toss gently to combine.
  9. Finish with extra sultanas, seeds, nuts and plant-based feta, if using.
