Smoky Mexican-Style Fritters

Ingredients

  • 1 pouch of Merchant Gourmet Mexican-Style Grains
  • 1 tin sweetcorn
  • 4 tbsp plain flour
  • 125ml plant-based milk
  • 2 tsp paprika
  • 2 tsp garlic powder
  • 3 tbsp plant-based mayo
  • 1 tbsp Sriracha
  • 2 tbsp oil
  • 1 courgette
  • 1 lime

Instructions

  1. Grate the courgette into a bowl and squeeze out any excess water into the sink.
  2. Add the Mexican-Style Grains, sweetcorn, paprika, garlic powder, flour and seasoning until it makes a thick paste. If it's not sticking together, add a little more flour.
  3. Heat your oil in a non-stick pan over a medium heat. Use one tablespoon to scoop the mixture into the pan to form little patties.
  4. Fry on each side for 3-5 mins until golden and crisp.
  5. Combine the Sriracha and mayo together to create the dip.
  6. Serve with a wedge of fresh lime and enjoy!
