Polenta is a ground corn and it is simple to cook.Use it in place or rice, pasta or potatoes. Make a bruschetta base, or a simple crispy coating for roast potatoes.
Use four times weight of water to polenta e.g. 50g Polenta +200ml water. 1 serving = 50-60g uncooked Polenta. Bring water to the boil and add Polenta in a steady steam, stirring continuously with a wooden spoon or whisk. For soft Polenta cook for 1 minute. For firm Polenta cook for 5 minutes and then allow to set. Season.
