Chestnut Stuffed Butternut Squash

Ingredients
  • 1 butternut squash
  • 1 tbsp extra virgin olive oil
  • Chestnut, Lentil & Cranberry Filling
  • 1 tbsp extra virgin olive oil
  • 1 leek, sliced
  • 2 garlic cloves, crushed
  • 100g mushrooms, diced
  • 1 sprig fresh thyme
  • 50g green lentils
  • 200ml vegetable stock
  • 2 tbsp soy sauce
  • 180g Merchant Gourmet Whole Chestnuts, chopped
  • 25g hazelnuts, chopped
  • 30g dried cranberries
  • To Serve
  • 2 tbsp vegan sour cream

  1. Preheat the oven to 180°C.
  2. Cut the butternut squash in half lengthways and remove the seeds.
  3. Place on a baking tray, drizzle with 1 tablespoon of olive oil and roast for 45–50 minutes until tender.
  4. Meanwhile, heat the remaining tablespoon of olive oil in a large frying pan.
  5. Add the leek and cook for a few minutes until softened.
  6. Stir in the garlic, mushrooms and thyme and cook for 5 minutes.
  7. Add the soy sauce, green lentils and vegetable stock.
  8. Simmer for 15–20 minutes, stirring regularly, until the lentils are cooked and the liquid has been absorbed.
  9. Stir through the Merchant Gourmet Whole Chestnuts, hazelnuts and dried cranberries and cook for a further few minutes.
  10. Remove the squash from the oven and carefully scoop out a little of the centre to create more space for the filling.
  11. Spoon the chestnut mixture into the squash halves.
  12. Return to the oven for 10 minutes.
  13. Finish with spoonfuls of vegan sour cream and serve with your favourite roast dinner trimmings.
