Chestnut & Lentil Moussaka

A comforting plant-based twist on the classic moussaka. Layers of roasted aubergine, Tomatoey French Lentils and sliced chestnuts are topped with a rich plant-based cheese sauce and finished with fresh orange, chilli and coriander.

Chestnut & Lentil Moussaka
Ingredients
  • 2 large aubergines, trimmed and sliced lengthways
  • 6 tbsp extra virgin olive oil
  • 4 tsp red or white wine vinegar
  • Salt and black pepper
  • Pinch freshly grated nutmeg
  • Lentil & Chestnut Filling
  • 2 pouches Merchant Gourmet Tomatoey French Puy & Green Lentils
  • 1 x 180g pouch Merchant Gourmet Simply Cooked Whole Chestnuts, thinly sliced
  • 400g tin chopped tomatoes
  • Zest of 1 orange
  • 4 tbsp orange juice
  • 1 large mild red chilli, deseeded and finely chopped
  • 4 tbsp fresh coriander, chopped
  • Salt and black pepper
  • Plant-Based Cheese Sauce
  • 250g plant-based soft cheese alternative
  • 200g grated plant-based Cheddar-style cheese
  • Salt and black pepper
  • Pinch freshly grated nutmeg
  1. Preheat the oven to 230°C / Gas Mark 8.
  2. Slice the aubergines lengthways into long slices and arrange on a lined baking tray.
  3. Brush both sides with the olive oil and vinegar. Season with salt, black pepper and a little nutmeg.
  4. Roast for 12–15 minutes until soft and tender.
  5. Meanwhile, mix together the orange zest, chilli and coriander in a small bowl.
  6. In a separate bowl, combine the Merchant Gourmet Tomatoey French Puy & Green Lentils, Merchant Gourmet Whole Chestnuts, chopped tomatoes, half of the orange and chilli mixture and the orange juice. Season to taste.
  7. In another bowl, mix together the plant-based soft cheese and grated plant-based cheese. Season lightly with salt, pepper and a pinch of nutmeg.
  8. Arrange half of the roasted aubergine slices in the base of an ovenproof dish.
  9. Spoon over the lentil and chestnut mixture in an even layer.
  10. Top with the remaining aubergine slices.
  11. Spread the cheese sauce evenly over the top.
  12. Bake uncovered for 18–20 minutes until golden and bubbling.
  13. Scatter over the remaining orange, chilli and coriander mixture.
  14. Return to the oven for 1 minute.
  15. Serve directly from the dish.
