Black Dhal Soup with Charred Cauliflower

Black Dhal Soup with Charred Cauliflower
Ingredients
  • 1 pouch Merchant Gourmet Black Dhal
  • ½ cauliflower, cut into florets
  • 1 medium carrot, diced
  • 2 celery sticks, diced
  • ½ red onion, diced
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp ground cinnamon
  • 1 head spring greens, shredded
  • 2 handfuls spinach
  • 500ml vegetable stock
  • 2 tbsp extra virgin olive oil
  • Salt and black pepper
  • Handful fresh coriander or parsley, chopped
  • Coconut milk (optional, for a creamier finish)

Black Lentil Dhal
Black Lentil Dhal
  1. Preheat a griddle pan over a high heat.
  2. Toss the cauliflower florets with 1 tablespoon of the olive oil, the cumin, coriander and cinnamon. Season lightly with salt and pepper.
  3. Char the cauliflower for a few minutes on each side until deeply golden and tender. Set aside.
  4. Meanwhile, heat the remaining olive oil in a casserole dish or large saucepan over a medium heat.
  5. Add the red onion, carrot and celery and cook for 5–6 minutes until softened.
  6. Pour in 300ml of the vegetable stock and simmer until the vegetables are tender.
  7. Stir through the Merchant Gourmet Black Dhal and spring greens and cook for 5 minutes.
  8. Add the spinach and cover with a lid until wilted.
  9. Pour in the remaining stock until you reach your preferred consistency. For a creamier soup, stir through a splash of coconut milk.
  10. Taste and season with salt and black pepper.
  11. Ladle into bowls and top with the charred cauliflower and fresh herbs before serving.
