Pea & Spinach Soup with Chestnut Croutons

A vibrant green soup packed with sweet peas, spinach and fresh mint, topped with crispy garlic chestnut croutons. Light, fresh and full of flavour, it's perfect for a simple lunch or elegant starter.

Pea & Spinach Soup with Chestnut Croutons
Ingredients
  • 1 potato (approximately 200g), peeled and diced
  • 3 spring onions, sliced
  • 240g frozen peas
  • 140g frozen spinach, chopped
  • 5 mint leaves
  • 750ml vegetable stock
  • 1 tsp olive oil
  • Salt and black pepper
  • Chestnut Croutons
  • 1 pouch Merchant Gourmet Whole Chestnuts, sliced
  • 1 tbsp vegetable oil
  • 20g unsalted butter, or vegan alternative
  • 2 garlic cloves, finely chopped
  • 4 tbsp parsley, finely chopped (optional)
  • Salt and black pepper

  1. Bring a saucepan of water to the boil and cook the potato for around 10 minutes until tender. Drain and set aside.
  2. Heat 1 teaspoon of vegetable oil in a large saucepan and gently cook the spring onions until softened.
  3. Add the peas, spinach, mint, cooked potato and vegetable stock.
  4. Bring to the boil, then reduce the heat and simmer gently for 10–15 minutes.
  5. Blend until completely smooth. Reheat if necessary.
  6. Meanwhile, heat the vegetable oil in a frying pan and add the butter and garlic. Cook gently until fragrant.
  7. Add the sliced Merchant Gourmet Whole Chestnuts in a single layer.
  8. Cook for around 20 seconds, then turn and cook for a further minute until golden and crisp.
  9. Season with salt and black pepper and stir through the parsley, if using.
  10. Divide the soup between bowls and top with the chestnut croutons before serving.
